This was so good and so easy! I love Shrimp, I love Spicy and I love Pasta!
Most people’s mind would go to a fettuccine noodle with a white, creamy cajun sauce, and I can go for that and lighten it up too, but tonight I wanted pure flavor and spice without all the heaviness. I also chose to use Zucchini Squash to make my noodles (Zoodles) making this recipe practically fat free except for the little bit of coconut oil I used to saute onions and garlic. Of course you could use regular angel hair pasta, but if you would like to use Zoodles it’s super easy. If serving as a main dish, as I did with this one, I would recommend at least 2 – 3 zucchini per person as they do shrink down quite a bit when cooked so make more than you think you’ll need, you can always use any extra leftovers to create another yummy dish!
To make the Zoodles you will need:
1) Zucchini (14 calories per 1/2 cup cooked)
2) Sea Salt
3) Julienne Peeler or a Mandoline with Julienne Attachment
4) Potato Peeler (if you don’t want any of the green skin)
5) Mesh Strainer
To make Shrimp Fra Diavolo you will need:
1) Shrimp (plenty of them in my opinion) (224 calories per 1/2 pound)
2) 1-2 tablespoons coconut oil (Olive Oil would work too) (120 calories per tablespoon)
3) Onion (I like Red Onions)
4) Garlic
5) Red Pepper Flakes
6) Italian Seasoning (Oregano, Marjoram, Thyme, Rosemary, Basil and Sage.
7) Can of Diced Tomatoes (105 calories per can)
For Zoodles – Wash Zucchini and peel off skin with potato peeler (if you don’t want the green color in your pasta) Julienne with julienne peeler or mandoline. I make these so often that I bought a Veggetti just for making vegetable noodles. Place Zoodles in mesh strainer and liberally salt with sea salt and let stand for at least 20 minutes (this sweats the zoodles of their moisture so your dish doesn’t end up to watery) You could be preparing the Fra Diavolo while the zoodles sweat! After 20 minutes, rinse noodles well, drain, place on some paper towels and squeeze out the liquid. You may be suprised how much water you get out of them!
For Fra Diavolo – Heat about 1 -2 tbsp coconut oil in skillet, add diced onions and saute until clear (about 2-3 min.) add garlic and saute another 1-2 minutes. Pour in can of diced tomatoes, red pepper flakes (however Spicy you like) and Italian Seasonings. Let simmer on low until zoodles are done sweating then add shrimp to sauce (they only need a few minutes – just until pink) Squeeze liquid from zoodles and then add to sauce. Toss a couple of minutes (until shrimp are done) plate it up and enjoy!
